Ingredients
  

Crispy Rice
  • 3 cups cooked sushi rice cooled
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 3 tbsp neutral oil for frying
Spicy Tuna
  • 8 oz sushi-grade tuna finely diced
  • 3 tbsp mayonnaise
  • 1-2 tbsp sriracha
  • 1 tsp soy sauce
  • 0.5 tsp sesame oil
  • 1 tbsp green onions chopped

Method
 

  1. Season cooked rice with vinegar mixture.
  2. Press into pan and chill 30 minutes.
  3. Cut into squares.
  4. Pan fry until golden and crispy.

  7. Serve immediately.
