Ingredients
  

  • 3 cups cooked sushi rice warm
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 1 lb salmon fillet skinless
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 cup mayonnaise
  • 2 tbsp sriracha
  • nori sheets cut into strips
  • green onions sliced
  • sesame seeds

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Season sushi rice with vinegar, sugar, and salt.
  3. Press rice into muffin tin cups.
  4. Bake rice cups until lightly golden.
  5. Season salmon with soy sauce and sesame oil.
  6. Fill rice cups with salmon.
  7. Bake until salmon is cooked through.
  8. Drizzle with spicy mayo and garnish before serving.

Notes

Best served warm. Customize toppings as desired.
