- Heat 1 tablespoon of oil in a skillet over medium heat. Add diced potatoes, smoked paprika, garlic powder, onion powder, salt, and pepper. Sauté 10–12 minutes until golden and tender.
- Cook chopped bacon in a separate pan until crispy. Drain on paper towels.
- Whisk eggs and milk. Scramble in a non-stick skillet over medium-low heat until soft. Season with salt and pepper.
- Lay a tortilla flat. Layer eggs, potatoes, bacon, cheeses, avocado, tomatoes, onions, and cilantro. Fold sides and roll tightly. Repeat.
- Heat a skillet or panini press. Lightly butter or spray. Grill burritos seam-side down 2–3 minutes per side until golden and cheese melts.
- Serve immediately, optional: add hot sauce, salsa, or sour cream.
Notes
For a spicier version, add jalapeño slices or hot sauce inside before rolling.
