Ingredients
  

Burrito Filling
  • 4 large eggs
  • 2 tbsp milk or cream
  • 4 strips bacon chopped
  • 1 small potato diced
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ cup cheddar cheese shredded
  • ¼ cup Monterey Jack cheese shredded
  • 1 small avocado sliced
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp diced tomatoes
  • 2 tbsp diced red onion
  • 4 large flour tortillas

Method
 

  1. Heat 1 tablespoon of oil in a skillet over medium heat. Add diced potatoes, smoked paprika, garlic powder, onion powder, salt, and pepper. Sauté 10–12 minutes until golden and tender.
  2. Cook chopped bacon in a separate pan until crispy. Drain on paper towels.
  3. Whisk eggs and milk. Scramble in a non-stick skillet over medium-low heat until soft. Season with salt and pepper.
  4. Lay a tortilla flat. Layer eggs, potatoes, bacon, cheeses, avocado, tomatoes, onions, and cilantro. Fold sides and roll tightly. Repeat.
  5. Heat a skillet or panini press. Lightly butter or spray. Grill burritos seam-side down 2–3 minutes per side until golden and cheese melts.
  6. Serve immediately, optional: add hot sauce, salsa, or sour cream.

Notes

For a spicier version, add jalapeño slices or hot sauce inside before rolling.
