Ingredients
  

Cake Batter
  • 1 cup mashed sweet potato cooked, skin removed
  • 1 cup rolled oats
  • 0.5 cup oat flour
  • 0.25 cup unsweetened applesauce
  • 0.25 cup natural peanut butter xylitol-free
  • 1 egg large
  • 1 tsp baking powder aluminum-free
Frosting
  • 0.5 cup plain Greek yogurt unsweetened
  • 2 tbsp natural peanut butter xylitol-free

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a small cake pan or silicone mold.
  2. In a bowl, mix mashed sweet potato, peanut butter, applesauce, egg, and yogurt until smooth.
  3. In a separate bowl, combine oat flour, rolled oats, and baking powder.
  4. Fold dry ingredients into wet ingredients until fully combined.
  5. Transfer batter to prepared pan and smooth the top.
  6. Bake for 30 minutes or until set. Cool completely.
  7. Mix frosting ingredients and spread lightly over cooled cake.
