Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
Filling
  • 1 cup fresh spinach chopped
  • 0.5 cup sundried tomatoes chopped
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup cream cheese
  • 0.25 cup parmesan cheese

Method
 

  1. Sauté garlic and spinach until wilted.
  2. Mix spinach with sundried tomatoes and cheeses.
  3. Cut pockets into chicken breasts and stuff with filling.
  4. Season chicken and bake until internal temperature reaches 165°F.
  5. Rest, slice, and serve.

Notes

Do not overfill chicken pockets to prevent leaking during baking.
