Stuffed Potato Loaf

Ingredients
  

  • 2 lbs russet potatoes peeled and cubed
  • 4 tbsp unsalted butter
  • 0.5 cup milk
  • 2 eggs large
  • 0.5 cup all-purpose flour
  • 1.5 cups shredded cheese

Equipment

  • Large pot
  • Potato masher
  • Loaf pan

Method
 

  1. Boil potatoes until tender and mash until smooth.
  2. Mix in butter, milk, eggs, seasoning, and flour.
  3. Layer half the mixture into a greased loaf pan.
  4. Add cheese filling and top with remaining potatoes.
  5. Bake until golden and set. Rest before slicing.

Notes

Let rest 10 minutes before slicing for best structure.
