Ingredients
  

  • 1.5 lb chicken breasts or thighs boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups corn kernels fresh or frozen
  • 3 cups cooked rice
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream or Greek yogurt
  • 2 tbsp lime juice fresh
  • 0.5 cup cotija or feta cheese crumbled
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Season chicken with olive oil, spices, salt, and pepper.
  2. Cook chicken in a skillet or grill pan until cooked through and lightly charred.
  3. Char corn in a hot skillet until golden.
  4. Mix mayonnaise, sour cream, and lime juice to make crema.
  5. Assemble bowls with rice, chicken, corn, crema, cheese, and cilantro.
