Chicken
  • 1 lb chicken breast boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
Street Corn
  • 2 cups corn kernels fresh or frozen
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp lime juice fresh
  • 0.5 tsp chili powder
Bowls
  • 2 cups cooked rice white or brown
  • 0.5 cup cotija cheese crumbled
  • 0.25 cup cilantro chopped

Method
 

  1. Season and cook chicken until fully cooked and lightly charred.
  2. Cook corn until warmed and lightly charred.
  3. Mix creamy street corn sauce and toss with corn.
  4. Assemble bowls with rice, chicken, corn, and toppings.
