Ingredients
  

Pancakes
  • 1.5 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.25 cups milk
  • 1 egg
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
Filling
  • 2 cups strawberries sliced
  • 3 tbsp sugar
  • 1 tsp lemon juice
Whipped Cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Mix strawberries with sugar and lemon juice and let sit.
  2. Prepare pancake batter by combining dry and wet ingredients.
  3. Cook small pancakes on a non-stick pan.
  4. Whip cream with sugar and vanilla until soft peaks form.
  5. Fold pancakes and fill with strawberries and whipped cream.
