Ingredients
  

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp granulated sugar
  • 2 cups fresh strawberries chopped
  • 0.5 cup granulated sugar
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 cup shortbread cookies crushed

Method
 

  1. Mix graham crumbs, butter, and sugar. Press into pie dish and freeze.
  2. Macerate strawberries with sugar.
  3. Beat cream cheese and vanilla until smooth.
  4. Whip heavy cream to stiff peaks.
  5. Fold everything together and spread into crust.
  6. Freeze 4–6 hours until firm.
