Ingredients
  

Cookie Dough
  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp milk
Strawberry Icing
  • 1 cup powdered sugar
  • 2-3 tbsp strawberry puree
  • 0.5 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk dry ingredients together.
  3. Cream butter and sugars, then add egg and vanilla.
  4. Combine wet and dry ingredients with milk.
  5. Scoop dough and bake 10–12 minutes.
  6. Cool completely.
  7. Prepare icing and spread over cookies.

Notes

Use fresh strawberries for best flavor. Let icing set fully before storing.
