Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
Strawberry Crunch
  • 1 cup vanilla cookies crushed
  • 1/2 cup freeze-dried strawberries or gelatin mix
  • 2 tbsp butter melted
Base
  • 10 mini taco shells

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in whipped cream until fluffy.
  3. Mix crushed cookies, strawberries, and melted butter for crumble.
  4. Fill taco shells with cheesecake mixture.
  5. Top with strawberry crunch.
  6. Chill before serving.
