Pancake Batter
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 2 eggs large
  • 1.5 cups milk
  • 3 tbsp butter melted
  • 1 tsp vanilla extract
Strawberry Cream Filling
  • 1 cup strawberries mashed
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Whisk dry pancake ingredients in one bowl.
  2. Mix wet ingredients in another bowl and combine.
  3. Cook thick pancakes until golden and set aside.
  4. Beat cream cheese, sugar, and vanilla until smooth.
  5. Whip cream and fold into cream cheese mixture.
  6. Add mashed strawberries to form filling.
  7. Layer pancakes with strawberry cream between each.
  8. Top stack with cream and fresh strawberries.
