Ingredients
  

Pancake Batter
  • 1.5 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 0.25 tsp salt
  • 1.25 cups milk
  • 1 egg
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
Strawberries
  • 1 cup strawberries chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice

Equipment

  • Mixing bowls

Method
 

  1. Prepare cheesecake filling and chill.
  2. Mix strawberries with sugar and lemon juice.
  3. Prepare pancake batter and rest briefly.
  4. Cook pancakes on medium heat.
  5. Add filling and seal with batter.
  6. Flip carefully and cook through.
  7. Serve with toppings.

Notes

Keep heat medium-low to avoid burning while cooking stuffed center.
