Ingredients
  

Crust
  • 2 cups crushed pretzels
  • 0.75 cup unsalted butter melted
  • 2 tbsp granulated sugar
Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
Topping
  • 2 cups fresh strawberries sliced
  • 0.33 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. Mix crushed pretzels, melted butter, and sugar. Press into pan and bake 8–10 minutes. Cool.
  3. Beat cream cheese and sugar until smooth. Add vanilla.
  4. Whip cream to stiff peaks and fold into cream cheese mixture.
  5. Spread filling over crust and refrigerate 2 hours.
  6. Cook strawberries with sugar, lemon juice, water, and cornstarch until thickened.
  7. Cool topping and spread over cheesecake layer.
  8. Chill 2–3 hours, slice, and serve.

Notes

Chill thoroughly for clean slices and best texture.
