Ingredients
  

Crust & Crumble
  • 2 cups crushed pretzels
  • 0.75 cup unsalted butter melted
  • 0.25 cup granulated sugar
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.66 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
Strawberry Layer
  • 2 cups fresh strawberries chopped
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook strawberries with sugar and lemon juice until soft, then thicken with cornstarch.
  3. Mix pretzels, butter, and sugar, then press half into a pan and bake.
  4. Beat cream cheese, sugar, eggs, vanilla, and sour cream until smooth.
  5. Pour filling over crust, add strawberry mixture, and swirl.
  6. Top with remaining pretzel mixture and bake until set.
  7. Cool completely, chill, then slice into bars.
