Ingredients
  

Cookie Dough Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup crushed pretzels
Cheesecake Layer
  • 8 oz cream cheese softened
  • 0.33 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
Strawberry Swirl
  • 1.5 cups fresh strawberries chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch slurry with water

Equipment

  • Cast iron skillet
  • Mixing bowls
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and grease a cast iron skillet.
  2. Prepare strawberry sauce by cooking strawberries, sugar, lemon juice, and cornstarch until thick.
  3. Cream butter and sugars until fluffy, then add eggs and vanilla.
  4. Mix in flour, baking soda, salt, and crushed pretzels to form cookie dough.
  5. Press cookie dough into skillet evenly.
  6. Beat cream cheese, sugar, egg, and vanilla for cheesecake layer.
  7. Spread cheesecake mixture over cookie dough.
  8. Add strawberry sauce and swirl gently.
  9. Bake 30–35 minutes until edges are golden and center is slightly set.
  10. Cool slightly before serving warm.

Notes

Do not overbake for gooey texture. Best served warm with ice cream.
