Ingredients
  

Pretzel Crust
  • 2 cups crushed pretzels
  • 0.75 cup butter melted
  • 3 tbsp sugar
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.75 cup sugar
  • 1 cup cookie butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
Strawberry Topping
  • 2 cups strawberries chopped
  • 0.25 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with water

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 350°F (175°C) and prepare pan.
  2. Mix crust ingredients and press into pan, then bake.
  3. Beat cream cheese and sugar until smooth.
  4. Add cookie butter, eggs, vanilla, and sour cream.
  5. Pour filling over crust and bake until set.
  6. Cool and refrigerate for several hours.
  7. Cook strawberry topping until thickened.
  8. Spread topping over cheesecake and slice.

Notes

Chill completely before slicing for best texture.
