Ingredients
  

  • 4 slices bacon chopped
  • 1 tbsp butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 3-4 jalapeños seeded and diced
  • 3 cups chicken broth
  • 1 cup milk or half-and-half
  • 8 oz cream cheese softened
  • 1.5 cups sharp cheddar cheese shredded
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook bacon in a large pot until crispy. Remove and set aside, leaving drippings.
  2. Add butter and sauté onion until soft. Stir in garlic and jalapeños.
  3. Pour in chicken broth and simmer for 5 minutes.
  4. Lower heat and add milk, cream cheese, and cheddar, stirring until smooth.
  5. Season with smoked paprika, salt, and pepper.
  6. Serve hot, topped with bacon and desired garnishes.

Notes

Adjust jalapeño quantity to control heat level.
