  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup milk
  • 0.5 cup chopped nuts walnuts or pecans
  • 0.5 cup fresh dandelion petals washed and dried

Method
 

  1. Preheat oven to 350°F (175°C) and prepare cake pan.
  2. Whisk dry ingredients together.
  3. Cream butter and brown sugar, add eggs and vanilla.
  4. Alternate adding dry ingredients and milk until just combined.
  5. Fold in nuts and dandelion petals.
  6. Bake 35–40 minutes until toothpick comes out clean.
  7. Cool, slice, and optionally dust with powdered sugar before serving.

Notes

Use fresh dandelion petals for best flavor.
