Ingredients
  

Main Ingredients
  • 1 lb boneless skinless chicken cut into chunks
  • 12 oz andouille sausage sliced
  • 1 cup long-grain white rice uncooked
  • 1 onion diced
  • 1 green bell pepper diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 14.5 oz diced tomatoes with juices
  • 2 cups chicken broth
  • 1 tbsp tomato paste

Method
 

  1. Brown sausage in skillet and transfer to slow cooker.
  2. Add chicken and vegetables to slow cooker.
  3. Stir in tomatoes, broth, tomato paste, and seasonings.
  4. Cook on Low 5–6 hours or High 3–4 hours.
  5. Add rice during final 45–60 minutes and cook until tender.
  6. Remove bay leaves, garnish, and serve.

Notes

Add rice during the final cooking stage to prevent mushy texture. Adjust spice level to preference.
