Ingredients
  

Seafood
  • 1.5 lb shrimp peeled and deveined
Pasta & Cheese
  • 12 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
Scampi Sauce
  • 6 tbsp butter
  • 1 cup heavy cream
  • 0.5 cup broth chicken or seafood

  • Large skillet

Method
 

  1. Cook lasagna noodles until al dente. Drain and set aside.
  2. Sauté shrimp with butter and garlic until just pink. Remove and set aside.
  3. Simmer cream and broth in the same pan until slightly thickened.
  4. Mix ricotta with Parmesan and parsley.
  5. Layer noodles, cheese mixture, shrimp, sauce, and mozzarella in baking dish.
  6. Bake covered until bubbly, then uncover to brown cheese.
  7. Rest before slicing and serving.

Notes

Avoid overcooking shrimp during sautéing.
