  • 2 slices rustic bread thick-cut
  • 1 cup whole milk ricotta
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil divided
  • 0.25 tsp sea salt or to taste
  • 0.25 tsp black pepper freshly cracked
  • fresh basil for garnish

Method
 

  1. Roast tomatoes with olive oil, salt, and pepper until blistered.
  2. Toast bread until golden and crisp.
  3. Whip ricotta with olive oil and salt until smooth.
  4. Spread ricotta over toast and top with tomatoes.
  5. Garnish with basil and serve warm.
