Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups milk
  • 2 tbsp melted butter
  • 0.25 tsp salt
Filling
  • 4 large eggs
  • 0.5 cup shredded cheese
  • 1 cup fresh spinach
  • 0.5 cup mushrooms, sliced
  • 4 strips cooked bacon optional

Method
 

  1. Whisk flour, eggs, milk, butter, and salt. Rest 20–30 minutes.
  2. Cook thin crepes in lightly greased skillet.
  3. Sauté vegetables and scramble eggs.
  4. Fill crepes with eggs, vegetables, and cheese.
  5. Fold, warm briefly to melt cheese, and serve.

Notes

Rest batter for tender crepes. Adjust milk for proper consistency.
