Ingredients
  

Salmon Wellington
  • 1 lb salmon fillet skin removed
  • 1 sheet puff pastry thawed
  • 1 egg for egg wash
Spinach Filling
  • 2 cups fresh spinach
  • 4 oz cream cheese
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped

Method
 

  1. Cook spinach and garlic in olive oil until wilted.
  2. Mix spinach with cream cheese, lemon juice, and dill.
  3. Roll puff pastry and spread spinach mixture in center.
  4. Place salmon on top and wrap pastry around it.
  5. Brush with egg wash.
  6. Bake at 400°F for 25–30 minutes.

Let rest 5 minutes before slicing.
