Stuffed Chicken Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • to taste salt and black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Slice a pocket into each chicken breast.
  3. Mix roasted red peppers, spinach, mozzarella, garlic, Italian herbs, salt, and pepper.
  4. Stuff each chicken breast with the mixture and secure with toothpicks.
  5. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side.
  6. Transfer chicken to baking dish and bake 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. Let rest 5 minutes, remove toothpicks, slice to reveal filling, and serve.

Notes

Pound chicken slightly for even thickness. Brush with garlic butter before baking for extra flavor.
