Ingredients
  

Coconut Base
  • 1.5 cups coconut milk
  • 0.5 cup heavy cream
  • 0.5 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder
  • 3 tbsp cold water
Orange Layer
  • 2 fresh oranges segmented
  • 0.25 cup orange juice
  • 2 tbsp honey
  • 1 tsp orange zest
Garnish
  • 0.25 cup toasted shredded coconut

Method
 

  1. Bloom gelatin in cold water for 5 minutes.
  2. Heat coconut milk, cream, and sugar in saucepan until sugar dissolves.
  3. Remove from heat and stir in gelatin until fully dissolved.
  4. Add vanilla extract and mix well.
  5. Pour mixture into serving cups and refrigerate until set.
  6. Combine orange segments, juice, honey, and zest.
  7. Top chilled coconut layer with orange mixture.
  8. Garnish with toasted coconut and serve chilled.

Notes

For stronger coconut flavor, use full-fat coconut milk.
