Method
- Cook udon noodles according to package directions. Drain and set aside.
- Heat oil in a skillet. Sauté garlic and ginger until fragrant.
- Stir in red curry paste and cook 1–2 minutes.
- Add coconut milk, broth, soy sauce, and sugar. Simmer.
- Add protein and vegetables and cook until done.
- Toss in udon noodles and coat evenly.
- Finish with lime juice and serve hot.
Notes
Adjust spice level by increasing or decreasing curry paste.
