Ingredients
  

Main Ingredients
  • 14 oz udon noodles
  • 1 tbsp oil
  • 3 tbsp red curry paste
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 can coconut milk full-fat
  • 1 cup broth vegetable or chicken
  • 2 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 lb protein of choice chicken, shrimp, or tofu

Equipment

  • Large skillet or wok
  • Pot
  • Wooden spoon

Method
 

  1. Cook udon noodles according to package directions. Drain and set aside.
  2. Heat oil in a skillet. Sauté garlic and ginger until fragrant.
  3. Stir in red curry paste and cook 1–2 minutes.
  4. Add coconut milk, broth, soy sauce, and sugar. Simmer.
  5. Add protein and vegetables and cook until done.
  6. Toss in udon noodles and coat evenly.
  7. Finish with lime juice and serve hot.

Notes

Adjust spice level by increasing or decreasing curry paste.
