Ingredients
  

Potstickers
  • 12 potstickers frozen or homemade
Noodles & Vegetables
  • 8 oz noodles ramen, udon, or soba
  • 2 cups baby bok choy chopped
  • 1 cup shredded carrots
  • 1 cup bell peppers thinly sliced
  • 3 scallions thinly sliced
  • 1 tbsp sesame seeds
Sauce
  • 0.25 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or brown sugar
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 0.25 tsp red pepper flakes optional

Equipment

Method
 

  1. Boil noodles in salted water until al dente. Drain and toss with sesame oil.
  2. Whisk together soy sauce, hoisin, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes.
  3. Heat oil in a skillet over medium heat. Cook potstickers flat-side down 2–3 minutes until golden.
  4. Add ¼ cup water, cover, and steam potstickers 4–5 minutes until cooked through. Uncover and crisp bottoms 1 more minute.
  5. Sauté bok choy, bell peppers, and carrots in 1 tsp sesame oil 3–4 minutes until tender-crisp.
  6. Divide noodles among bowls. Top with vegetables and potstickers.
  7. Drizzle with sauce and sprinkle with scallions, sesame seeds, and optional garnishes.
  8. Serve immediately and enjoy warm.

Notes

Use fresh ingredients and adjust sauce sweetness to taste. Optional spicy twist: add Sriracha.
