Method
- Boil noodles in salted water until al dente. Drain and toss with sesame oil.
- Whisk together soy sauce, hoisin, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes.
- Heat oil in a skillet over medium heat. Cook potstickers flat-side down 2–3 minutes until golden.
- Add ¼ cup water, cover, and steam potstickers 4–5 minutes until cooked through. Uncover and crisp bottoms 1 more minute.
- Sauté bok choy, bell peppers, and carrots in 1 tsp sesame oil 3–4 minutes until tender-crisp.
- Divide noodles among bowls. Top with vegetables and potstickers.
- Drizzle with sauce and sprinkle with scallions, sesame seeds, and optional garnishes.
- Serve immediately and enjoy warm.
Notes
Use fresh ingredients and adjust sauce sweetness to taste. Optional spicy twist: add Sriracha.
