Ingredients
  

Taco Filling
  • 1 cup diced potatoes
  • 3 eggs beaten
  • 0.5 cup shredded cheese
  • 1 tbsp butter or oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Assembly
  • 4 small tortillas warmed

Method
 

  1. Heat butter or oil in a skillet over medium heat.
  2. Add diced potatoes and season with salt and pepper.
  3. Cook until potatoes are golden and tender.
  4. Push potatoes to one side and scramble eggs in the same pan.
  5. Combine eggs and potatoes and sprinkle with cheese.
  6. Warm tortillas and fill with potato egg cheese mixture.
  7. Serve immediately.

Notes

Add salsa or hot sauce for extra flavor.
