Method
- Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately mix flour mixture and milk into butter mixture. Fold in strawberry puree until smooth.
- Divide batter among pans and bake 25–30 minutes. Cool completely on wire racks.
- Beat butter until smooth. Gradually add powdered sugar, strawberry puree, and vanilla. Add food coloring if desired.
- Assemble cake with frosting between layers and on top. Garnish with sliced fresh strawberries.
Notes
Chill cake 30 minutes before slicing for cleaner cuts.
