  • 1 whole snapper 2-3 lbs, cleaned
  • 2 tbsp olive oil
  • 1.5 tsp sea salt
  • 1 tsp black pepper
  • 3 cloves garlic sliced
  • 1 lemon sliced
  • 0.25 cup parsley chopped
  • 4 sprigs thyme

Equipment

  • Baking sheet
  • Roasting pan
  • Sharp knife
  • Fish spatula

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Score and season the fish with oil, salt, pepper, and lemon juice.
  3. Stuff cavity with lemon, garlic, parsley, and thyme.
  4. Place on baking sheet and roast 25–30 minutes.
  5. Rest 5 minutes before serving.
