Method
- Preheat oven to 375°F (190°C) and line pan with parchment.
- Mix all meatloaf ingredients gently until combined.
- Press half the mixture into a loaf and layer Swiss cheese.
- Top with remaining meat and seal edges.
- Lay bacon over top and brush with ketchup glaze.
- Bake 50–60 minutes until cooked through.
- Rest 10 minutes before slicing and serving.
Notes
Let meatloaf rest before slicing to keep cheese from spilling out.
