Ingredients
  

Meatloaf
  • 2 lb ground beef 80/20 preferred
  • 1 cup breadcrumbs
  • 2 eggs large
  • 0.5 cup milk
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
Filling & Topping
  • 8 slices Swiss cheese
  • 8 slices bacon
  • 0.5 cup ketchup for glaze

Equipment

  • Large mixing bowl
  • Baking sheet or loaf pan
  • Parchment paper
  • Basting brush

Method
 

  1. Preheat oven to 375°F (190°C) and line pan with parchment.
  2. Mix all meatloaf ingredients gently until combined.
  3. Press half the mixture into a loaf and layer Swiss cheese.
  4. Top with remaining meat and seal edges.
  5. Lay bacon over top and brush with ketchup glaze.
  6. Bake 50–60 minutes until cooked through.
  7. Rest 10 minutes before slicing and serving.

Notes

Let meatloaf rest before slicing to keep cheese from spilling out.
