  • 500 g ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup black beans
  • 1 cup corn
  • 2 cups salsa
  • 1 cup tomato sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp paprika
  • 6-8 tortillas
  • 3 cups shredded cheese

Method
 

  1. Preheat oven to 180°C (350°F).
  2. Cook ground beef until browned.
  3. Add onion and garlic, cook until softened.
  4. Stir in remaining ingredients and simmer.
  5. Layer tortillas, meat mixture, and cheese.
  6. Repeat layers and top with cheese.
  7. Bake covered, then uncover to melt cheese.
