Ingredients
  

Toast Base
  • 4 slices rustic bread
  • 2 cups cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 cup shredded cheese mozzarella or blend
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss halved tomatoes with olive oil, garlic, salt, and pepper.
  3. Roast tomatoes for 15–20 minutes until blistered and caramelized.
  4. Place bread on baking sheet and lightly brush with olive oil.
  5. Top bread with roasted tomatoes and cheese.
  6. Bake 8–10 minutes until cheese is melted and bread is crisp.

Notes

Best served immediately while hot and melty.
