Ingredients
  

  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1.5 tsp vanilla extract
  • 20 large marshmallows
  • 1 cup powdered sugar icing
  • candy eyes and decorations for decorating

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Whisk flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy.
  4. Add egg and vanilla and mix well.
  5. Combine dry ingredients with wet ingredients.
  6. Scoop dough onto baking sheets.
  7. Bake 8–9 minutes, add marshmallows, then bake 2–3 more minutes.
  8. Cool completely and decorate.

Notes

Decorate only after cookies have cooled completely.
