Ingredients
  

  • 1 lb steak flank or sirloin
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup Kalamata olives sliced
  • 0.5 cup feta cheese crumbled

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Marinate steak for at least 15 minutes.
  3. Cook steak over medium-high heat until desired doneness.
  4. Rest steak, then slice thinly against the grain.
  5. Assemble bowls with grains, steak, vegetables, and feta.
  6. Finish with sauce and fresh herbs if desired.
