Ingredients
  

Soup Base
  • 1 lb chicken breasts
  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 2 cups spinach fresh

Equipment

  • Wooden spoon

Method
 

  1. Cook chicken in olive oil until fully cooked, then shred.
  2. Sauté onion until soft.
  3. Add garlic and sun-dried tomatoes.
  4. Pour in chicken broth and bring to simmer.
  5. Return shredded chicken to pot.
  6. Add cream and parmesan.
  7. Stir in spinach until wilted.
  8. Simmer briefly and serve hot.

Notes

Serve with crusty bread or garlic bread for a complete comforting meal.
