- Heat olive oil in a skillet over medium-high heat.
- Season chicken with chili powder, paprika, cumin, salt, and pepper.
- Cook chicken 5–7 minutes until golden and fully cooked. Remove from skillet.
- Sauté bell peppers and onions 4–5 minutes until tender-crisp.
- Add black beans and corn, cook 2 more minutes.
- Assemble rice bowls with rice, chicken, vegetables, cheese, and cilantro.
- Serve with lime wedges and optional toppings.
