Ingredients
  

Potatoes
  • 4 russet potatoes large
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Pulled Pork
  • 2 cups pulled pork cooked
  • 0.5 cup barbecue sauce
Toppings
  • 1 cup cheddar cheese shredded
  • 0.5 cup sour cream
  • 4 tbsp butter
  • 4 tbsp bacon bits
  • 3 tbsp green onions chopped

Method
 

  1. Preheat oven to 400°F (200°C). Wash and dry potatoes.
  2. Rub potatoes with olive oil, salt, and pepper.
  3. Place on baking sheet and bake for 50–60 minutes until tender.
  4. Heat pulled pork with barbecue sauce in a saucepan over medium heat.
  5. Slice baked potatoes open and fluff interior with fork.
  6. Add butter inside each potato.
  7. Fill with pulled pork and sprinkle with cheddar cheese.
  8. Top with sour cream, bacon bits, and green onions before serving.

Notes

Leftover pulled pork works perfectly for this recipe and reduces preparation time.
