- Preheat oven to 400°F (200°C). Wash and dry potatoes.
- Rub potatoes with olive oil, salt, and pepper.
- Place on baking sheet and bake for 50–60 minutes until tender.
- Heat pulled pork with barbecue sauce in a saucepan over medium heat.
- Slice baked potatoes open and fluff interior with fork.
- Add butter inside each potato.
- Fill with pulled pork and sprinkle with cheddar cheese.
- Top with sour cream, bacon bits, and green onions before serving.
Notes
Leftover pulled pork works perfectly for this recipe and reduces preparation time.
