Ingredients
  

  • 12 oz pasta spaghetti or linguine
  • 4 tbsp olive oil
  • 4 cloves garlic thinly sliced
  • 2 cans sardines in olive oil drained slightly
  • 1 lemon zest and juice
  • 0.5 tsp red pepper flakes optional
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 0.25 cup fresh parsley chopped

Equipment

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water.
  2. Heat olive oil in a skillet over medium-low heat.
  3. Add garlic and cook gently until fragrant.
  4. Add sardines and break into flakes.
  5. Stir in red pepper flakes and lemon zest.
  6. Add pasta and a splash of pasta water, tossing to coat.
  7. Remove from heat and add lemon juice, parsley, salt, and pepper.

Notes

Use high-quality sardines for best flavor.
