Ingredients
  

Burger Patties
  • 1 lb ground beef 80/20 fat ratio
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 1 tbsp butter for toasting buns

Equipment

  • Cast iron skillet
  • Spatula
  • Mixing bowl
  • Griddle or skillet

Method
 

  1. Divide ground beef into four loose balls.
  2. Heat skillet over high heat.
  3. Place beef balls onto skillet and smash thin with spatula.
  4. Season with salt and pepper.
  5. Cook 2–3 minutes until crispy.
  6. Flip and add cheese.
  7. Cook another 1–2 minutes until cheese melts.
  8. Serve on toasted buns with toppings.

Notes

Use high heat and smash patties immediately for best crispy edges.
