Method
- Preheat oven to 350°F (175°C) and prepare two 8-inch cake pans.
- Whisk flour, baking powder, and salt together.
- Beat butter and sugar until fluffy.
- Add eggs one at a time, then mix in lemon zest and vanilla.
- Alternate adding dry ingredients and milk until smooth batter forms.
- Divide batter between pans and bake 25–30 minutes.
- Cool cake layers completely.
- Whip cream to soft peaks.
- Beat mascarpone with powdered sugar, lemon juice, zest, and vanilla.
- Fold whipped cream into mascarpone mixture.
- Spread filling between cake layers and on top.
Notes
For stronger lemon flavor add extra lemon zest to the cream filling.
