Method
- Preheat oven to 425°F (220°C).
- Dry chickpeas thoroughly and remove loose skins.
- Warm olive oil with garlic cloves, then remove garlic.
- Toss chickpeas with garlic oil and spices.
- Roast 30–35 minutes, shaking pan every 10 minutes.
- Cool completely before serving for maximum crunch.
Notes
Do not store airtight. Re-crisp in oven if needed.
