Ingredients
  

Carrots
  • 1.5 lb carrots peeled and halved
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Whipped Feta
  • 6 oz feta cheese crumbled
  • 0.5 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Equipment

  • Baking sheet
  • Food processor
  • Mixing bowl

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with olive oil, honey, salt, and pepper.
  3. Roast carrots for 25–30 minutes, flipping halfway.
  4. Blend feta, yogurt, olive oil, and lemon juice until smooth.
  5. Spread whipped feta on plate and top with roasted carrots.

Notes

Serve warm or at room temperature for best flavor.
