Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry potatoes thoroughly. Cut larger ones in half.
- Whisk olive oil, honey, garlic, oregano, salt, and pepper together.
- Toss potatoes in mixture until fully coated.
- Spread in single layer on baking sheet.
- Roast 35–40 minutes, flipping halfway through, until golden and crispy.
- Sprinkle feta over hot potatoes and garnish with parsley before serving.
Notes
For extra crispiness, avoid overcrowding the baking sheet and dry potatoes thoroughly before roasting.
