Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved if large
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry potatoes thoroughly. Cut larger ones in half.
  3. Whisk olive oil, honey, garlic, oregano, salt, and pepper together.
  4. Toss potatoes in mixture until fully coated.
  5. Spread in single layer on baking sheet.
  6. Roast 35–40 minutes, flipping halfway through, until golden and crispy.
  7. Sprinkle feta over hot potatoes and garnish with parsley before serving.

Notes

For extra crispiness, avoid overcrowding the baking sheet and dry potatoes thoroughly before roasting.
