Ingredients
  

  • 1 cup rolled oats blended into flour
  • 1 egg egg
  • 0.5 cup unsweetened applesauce
  • 0.5 cup fresh blueberries
  • 0.5 cup plain Greek yogurt for frosting

Equipment

  • Mini muffin tin
  • Food processor

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Blend oats into flour.
  3. Mix oat flour, egg, and applesauce.
  4. Fold in blueberries.
  5. Bake in mini muffin tin for 15–18 minutes.
  6. Cool completely and frost with yogurt if desired.

Notes

Always use unsweetened, xylitol-free yogurt and peanut butter.
