Ingredients
  

Chicken Marinade
  • 1 lb chicken breasts boneless, skinless
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Flatbread Assembly
  • 4 flatbreads
  • 1 cup Greek yogurt
  • 0.5 cup cucumber grated and drained
  • 1 cup cherry tomatoes diced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled

Equipment

  • Mixing bowls
  • Skillet or grill pan

Method
 

  1. Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Marinate chicken for at least 20 minutes.
  2. Cook chicken in a skillet or grill pan over medium-high heat until fully cooked. Rest, then slice.
  3. Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, and salt to make tzatziki.
  4. Warm flatbreads until lightly toasted.
  5. Spread tzatziki over flatbreads and top with chicken, vegetables, and feta.
  6. Serve warm with optional fresh herbs.

Notes

For best flavor, marinate chicken overnight and assemble flatbreads just before serving.
