- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut potatoes into 1-inch cubes and pat dry.
- Toss potatoes with olive oil, melted butter, garlic, salt, pepper, and dried herbs.
- Add grated Parmesan and toss gently.
- Spread potatoes evenly on baking sheet.
- Roast 25–30 minutes, turning halfway, until golden and crispy.
- Garnish with fresh parsley and serve hot.
