  • 4 potatoes cut into 1-inch cubes
  • 3 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 1 tsp dried oregano or Italian seasoning
  • to taste salt and pepper
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut potatoes into 1-inch cubes and pat dry.
  3. Toss potatoes with olive oil, melted butter, garlic, salt, pepper, and dried herbs.
  4. Add grated Parmesan and toss gently.
  5. Spread potatoes evenly on baking sheet.
  6. Roast 25–30 minutes, turning halfway, until golden and crispy.
  7. Garnish with fresh parsley and serve hot.

Notes

Serve immediately for best crunch.
