Ingredients
  

  • 12 oz pasta
  • 1 lb shrimp peeled and deveined
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 0.5 tsp red chili flakes optional
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice fresh
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Wide skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente; reserve pasta water and drain.
  2. Sauté mushrooms in olive oil and butter until golden; set aside.
  3. Cook shrimp briefly until pink; remove and set aside.
  4. Add garlic and chili flakes to skillet and cook until fragrant.
  5. Add reserved pasta water and simmer gently.
  6. Return shrimp and mushrooms, then add pasta and toss.
  7. Finish with Parmesan, lemon juice, and parsley.
  8. Season to taste and serve immediately.

Notes

Do not overcook shrimp to keep them tender.
